Turn on the oven on at 220 degrees. Rub the butternut slices with some olive oil, pepper and salt and put them on an ovenplate in the oven during approx. 40 minutes until they are soft.
Put the cherrytomatoes in an overnplate and pour some oliveoil and salt over them and put in the oven for approx. 40 minutes.
Meanwhile make the dressing for the tomatoes. Mix the ginger with the sugar and garlic together to obtain a grainy paste.
Take the tomatoes out of the oven after 40 min and put the grainy paste on top of them. Put them back in the oven for 20-30 minutes.
Lime dressing: stir the yoghurt together with the lime zest and lime juice, pepper and salt.
Take the butternut and tomatoes out of the oven. Put them together in a nice plate. Finish with the roasted cashew nuts on top and the yoghurt dressing.
