Stuffed pumpkin

Tagliatelle Parma

Ingredients:

    • 1 pumpkin cut in half 
    • 2 cups of couscous (per half pumpkin)
    • feta
    • parsley
    • pomegranate
    • walnuts
    • olive oil

    For the dressing:

    • yoghurt
    • 2 tsp of mustard
    • 2 tsp of apple cider vinegar
    • pepper & salt

Preparation:

Cut the pumkin in half and rub it in with some olive oil on all sides. 
Put in an oven of 180 degrees during 1 hour minimum until the pumpkin is soft. Then loosen the pulp of the pumpkin with a fork. 

Cook the couscous as mentioned on the packaging, add some olive oil and stir. Add the couscous in the pumpkin and mingle together with the pomegranate, the walnuts and finish with some feta cheese on top. 

Put back in the oven for approx. 10 minutes. 

For the dressing: Mingle all ingredients together and bring to taste with pepper and sea salt. 

Take the plate out of the oven and finish with fresh parsley and the yoghurt dressing.
