Poke a few holes in the sweet potatoes with a fork. Put them in the oven at 200 degrees during an hour or more depending on the size of the potatoes.
Meanwhile fry the red onion in a pan with a splash of olive oil.
Add the grilled paprika, the corn and the beans.
Boil the quinoa and red lentils according to the directions on the packaging. When cooked add the quinoa and lentils to the mix of corn, onion, paprika and beans. Add Mexican spices, black pepper, salt and stir.
Take the potatoes out of the oven and slice them in two pieces. Smash the inside of the potato a bit and then fill them with the filling.
Smash an avocado and put some on top of the stuffed potato.
Finish with cilantro, hot sauce and avocado sauce.
I made this dish plantbased. If you don't eat plantbased you can add some cheese on top and grill in the oven a few minutes and finish up with some sour cream. Also very good :-)
