Asparagus Belgian style

Tagliatelle Parma

Ingredients:

  • Serves 2: 

    • 14 green asparagus
    • 3 hard-boiled eggs 
    • handful of fresh parsley
    • 150 g butter
    • nutmeg 

Preparation:

Fill a pan with cold water. Put the asparagus in the water and heat until it boils. Leave it boil for a minute, then turn off the fire and leave the asparagus for 10 more minutes. 

In the meantime, melt the butter and mash the eggs. Cut the parsley very thinly.
Once the butter is melted, add the eggs and parsley to it. 
Finish with pepper, salt and nutmeg. 

Serve the asparagus on a nice plate and put the butter-egg mix on top of it.
